UMU餐厅空间设计，餐厅空间布局

　　UMU是TonyChi(季裕棠)于两年前设计完成的餐厅空间，它坐落在伦敦市西端、一个名叫BrutonPlace的地方，那也是伦敦社交名流所选择的高级住宅区。基本上，这间餐厅是以日本京都的古雅气质取代东京的现代感，其主厨IchiroKubota也是来自京都，京都的风格不论形式或者表现上，都带有相当的人文色彩和诗意的古雅。

　　对于业主MARCLtd(MarlonAbelaRestaurantCorporation)而言，他们极力地希望以保留原建筑结构作为基础，然后在餐厅中放进日式的元素及感觉。如何使来宾能在此现代建筑架构中享受到精致的日式美食，以及非常日本的视觉体验，这是设计师必须以他的专业素养去关注并置入的挑战。

　　设计师TonyChi表示：「最好的概念转换方式是只保留它的精神。本餐厅有一种新生的、经过时代洗礼后在时尚之都伦敦重新孕育出的日本形式，它带有一点对京都古城浪漫的怀旧，却在伦敦获得新生。我希望这是一个新的诠译方式，它的许多设计符号源自京都，源于自然(Bornofnature)，不虚伪矫饰，而且非常尊重本土材料、尊重传统西方形式的建筑构造。其中包括日本设计中最重视的元素如简约、俐落、精确等。」

　　在这个餐厅中，设计师特别强调的日本精神在于：贮藏清酒的地窖设计，努力让日本的“feeling”浮现出来。入口处的大木门，入内是一个仿如雕塑般、以高级原木制成的“gatheringtable”，它是雕塑家Jae-HyoLee的作品。另外，入口和寿司吧上方、天花板是以闪闪发光的玻璃仿竹子造型装饰，这是EtkinFizgeral的点子，其实也或多或少是按业主的具体要求而刻意量身定做的。

　　半独立式的清酒品尝区，它的特别处在于清酒都得到一定的冷却装置，「玻璃盒」可以控制它们的保存温度。为了营造日式的氛围，本案刻意采用褐色漆、褐色木头如欧洲胡桃木、再加上高亮度的红漆、花岗岩，以及地面多以木板铺面和收边。

　　对于这间伦敦高级社交圈常常定点聚会的日本餐厅，很显然的，设计师创造了一种“ModernJapaneseStyle”，融合传统日式建筑与摩登室内空间于一体，除此，餐厅用使用的平面印制品如Manu、桌巾、织品、器皿、甚至家具等，都含盖在TonyChi的整体规划内，这也是他一贯的作风。他认为什至待者的态度，都应该有一定程度的训练，而这些，都包含在空间设计师必须介入的细目中。

　　一位长时间与TonyChi在工程上合作的台湾设计师张泽民曾这样形容他：「Tony不是那种捉住机会秀自己品味与设计的人，成就自己容易，但要体贴使用的客户、营运的业主，需要悉心经营的细节就非常多、非常细腻，但他都做到了。」

　　在这个以日本形式与精神呈现的餐厅中，TonyChi事实上也回应了他对日本文化的致敬。
