UMU是TonyChi(季裕棠)于两年前设计完成的餐厅空间,它坐落在伦敦市西端、一个名叫BrutonPlace的地方,那也是伦敦社交名流所选择的高级住宅区。基本上,这间餐厅是以日本京都的古雅气质取代东京的现代感,其主厨IchiroKubota也是来自京都,京都的风格不论形式或者表现上,都带有相当的人文色彩和诗意的古雅。 对于业主MARCLtd(MarlonAbelaRestaurantCorporation)而言,他们极力地希望以保留原建筑结构作为基础,然后在餐厅中放进日式的元素及感觉。如何使来宾能在此现代建筑架构中享受到精致的日式美食,以及非常日本的视觉体验,这是设计师必须以他的专业素养去关注并置入的挑战。 设计师TonyChi表示:「最好的概念转换方式是只保留它的精神。本餐厅有一种新生的、经过时代洗礼后在时尚之都伦敦重新孕育出的日本形式,它带有一点对京都古城浪漫的怀旧,却在伦敦获得新生。我希望这是一个新的诠译方式,它的许多设计符号源自京都,源于自然(Bornofnature),不虚伪矫饰,而且非常尊重本土材料、尊重传统西方形式的建筑构造。其中包括日本设计中最重视的元素如简约、俐落、精确等。」 在这个餐厅中,设计师特别强调的日本精神在于:贮藏清酒的地窖设计,努力让日本的“feeling”浮现出来。入口处的大木门,入内是一个仿如雕塑般、以高级原木制成的“gatheringtable”,它是雕塑家Jae-HyoLee的作品。另外,入口和寿司吧上方、天花板是以闪闪发光的玻璃仿竹子造型装饰,这是EtkinFizgeral的点子,其实也或多或少是按业主的具体要求而刻意量身定做的。 半独立式的清酒品尝区,它的特别处在于清酒都得到一定的冷却装置,「玻璃盒」可以控制它们的保存温度。为了营造日式的氛围,本案刻意采用褐色漆、褐色木头如欧洲胡桃木、再加上高亮度的红漆、花岗岩,以及地面多以木板铺面和收边。 对于这间伦敦高级社交圈常常定点聚会的日本餐厅,很显然的,设计师创造了一种“ModernJapaneseStyle”,融合传统日式建筑与摩登室内空间于一体,除此,餐厅用使用的平面印制品如Manu、桌巾、织品、器皿、甚至家具等,都含盖在TonyChi的整体规划内,这也是他一贯的作风。他认为什至待者的态度,都应该有一定程度的训练,而这些,都包含在空间设计师必须介入的细目中。 一位长时间与TonyChi在工程上合作的台湾设计师张泽民曾这样形容他:「Tony不是那种捉住机会秀自己品味与设计的人,成就自己容易,但要体贴使用的客户、营运的业主,需要悉心经营的细节就非常多、非常细腻,但他都做到了。」 在这个以日本形式与精神呈现的餐厅中,TonyChi事实上也回应了他对日本文化的致敬。 中文编译」黄湘娟 UMU CelebratedNewYorkbaseddesignerTonyChiwasinspiredbythesimple,cleanlinesoftraditionalJapanesearchitectureincreatingtheinteriorsforUMU,oneofLondon!|smostexcitingnewgatheringplacesforpeopleofsuperiortaste. Theresultisastunninginteriorthatblendswellwiththemodernstructurethatisitshome,yetensuresguestsareinstantlyawarethattheyareabouttoenjoyatrulyJapaneseexperience.Itisdesignleadingandreinforcingcuisine. Thebestwaytotranslatetheconcept,withoutlosingthespiritofthedesign,isthatitisarestaurantnewlyborn,uprising,appearinginnovativelyontheLondonscene,TonyChisays.ItisthebirthofJapanesestyleinamoderntimeorsomethingreminiscentofKyotostyleinmoderndayLondon. Theemphasisisontheverticalsakecellar,togivethefocusoftheproducts,andahorizontalcompositionelsewhere,tomaintaintheJapanese"feel"oftheplace. Glisteningsilveredmuranoglass"bamboo"(createdbyElkinFitzgeraldintheUS)arefeaturedalongtheceilingattheentryandoverthesushibar,whichalsohasacustom-made,leaded-glass,verticalsushicase(byBerkeleyProjects). Withintherestaurantitself,walnutscreensopentorevealcustom-madethreemetrohighsakecoolerswhichlinethebackofthediningroom.Anotherfeatureisasemi-privatesaketastingtableforten. Thereisalsoadecorative"glassbox"temperaturecontrolledwinecellar. InkeepingwiththeJapaneseandambience,materialsusedthroughoutincludechocolatebrownlacquer,brownwoods(wenge,Europeanwalnut),redlacquerhighlights,graniteandendgrainwoodblockfloors.
